Oat cookies with dark chocolate and walnuts

- 115 grams unsalted butter (room temperature)
- 80 grams sugar
- 1 egg
- 1 teaspoon vanilla extract
- 140 grams flour (all-purpose/tipo-00)
- Half teaspoon dry yeast
- 1 teaspoon cinnamon
- 100 grams old fashion rolled oats
- 100 grams dark chocolate
- 30 grams of crushed walnuts
- Baking paper
- Oven tray
Preheat the oven on 180 degrees and cover your baking trays with baking paper. Then in a bowl add the sugar and butter and beat with a mixer until smooth. Then add the egg and the vanilla aroma into the bowl and mix again.
In another bowl add all the dry ingredients: the flour, dry yeast, cinnamon and the rolled oats. Then cut the dark chocolate in little pieces ( I like them uneven, so every bite is a surprise). Crush the walnuts with your hands, into smaller pieces and add both the chocolate and walnuts into the dry ingredients. Mix with a spatula or spoon.
then start adding the dry ingredients with the wet ones, using a spatula or spoon. Take a spoonful of the mixture and roll balls inside your hands, place them on the tray, leaving some space in between for them to flatten out. Then leave them baking for 10/12 minutes.
Let the cookies cool down for about 5/10 minutes before serving.
