Heavenly Pecan Brownies

Ingredients

  • 200 grams of good quality dark chocolate
  • 200 grams butter (in small pieces)
  • 4 eggs
  • 150 grams of sugar
  • 100 grams of 00 flour/white fine flour
  • 40 grams of almond flour
  • 150 grams of pecan nuts (roasted in the oven)

Preparation
Preheat the oven on 180 degrees. Take a tray or baking paper and lay all the pecan nuts on top. Meanwhile bring a pot with water to boil. Then break all the chocolate in smaller pieces. Same as for the butter, cut in small pieces and put both the chocolate and butter in a bowl, that fits on top of the pot with boiling water. Slowly let the butter and chocolate melt au-bain-marie.

Then roast the pecan nuts in the oven for about 4 minutes, leave some on the side, that will go on top of the brownie.

Take another bowl, crack the eggs and whip for two minutes until foamy. Then add the sugar and mix another 5 minutes, until you have a nice thick mix. In another bowl mix the two flours with a spatula/spoon/hands. When the chocolate and butter are melted, let them cool down a bit before mixing them with the eggs.

Then in a big bowl slowly incorporate the eggs with the chocolate/butter mixture, by folding it in. Use a spatula for the folding. Then bit by bit add the flours, always with the folding movement. Leave a handful of pecan nuts on the side for on top of the brownie and crush the rest of the pecan nuts into smaller pieces, folding them into the mix.

Take a baking tray , cover the bottom with baking paper and use butter or baking spray for the sides and on top of the baking paper. Then pour in the brownie mix, cover with some whole pecan nuts on top and leave the brownie in the over for 20/25 minutes. Check after 10 minutes and if needed turn the tray around, so it will brown evenly.

Serving
When the brownie is ready, let it cool down for 5/10 minutes before cutting it in pieces.
