Fresh Watermelon salad
Super fresh watermelon salad, served with a sweet/sour lime honey mint dressing. Exactly what you need on the summer days for some freshness.

Servings: 2 people
- 1 small watermelon (around 1,5 kg)
- ½ cucumber
- 80 grams feta cheese (good quality)
- Zest and juice of one lime
- Baby spinach (for serving/decorate)
For the dressing
- 40 grams of good quality extra virgin olive oil
- 10 grams of mint leaves + extra for serving
- 10 grams honey
- Pinch of salt
- ½ tsp of mustard
- Juice of one lime
Preparation of the salad
Start with cutting the watermelon. Remove the skin, remove the seeds, make thick slices and cut these into cubes. Then leave on the side for serving. Take the cucumber, peel the skin and use the peeler to make thin strings. Try to peel the strings until you reach the soft inside of the cucumber, this is to soft to use to make the strings. Take a bowl of water and leave the strings of cucumber inside the water, so the colour stays fresh for when we serve. Cut the feta cheese in small cubes and leave the lime on the side for when we serve.
Preparation of the dressing
Use a kitchen machine or a container in which you can blend. Add all the dressing ingredients. Start with the olive oil, wash and dry the mint leaves before adding, then add the honey, a pinch of salt, mustard and juice of one lime. Blend everything until smooth and check the flavour, if you want some extra salt or if you like it sweeter, some more honey.
Take a nice tray or plate. Start with placing the watermelon cubes and in between leave some spinach leaves. Then cover this with some dressing, before we start to add the rest of the ingredients. Now make a nice roll of the cucumber strings to leave in the middle of the plate. Then leave the feta cubes around, some extra mint leaves and zest the lime on top of everything. After cut the lime in thin slices and leave in between the rest of the ingredients. This watermelon salad is perfect to refresh in the summer days!
