Lemony Zucchini Salad
A super refreshing summer zucchini salad with lemon, feta, mint and a spicy chilli touch. Perfect as a summer lunch or summer side dish.

Ingredients

  • 3/4  zucchini’s around 400/450 grams
  • 1 garlic clove
  • 1 chilli pepper
  • Olive oil
  • Salt
  • A handfull of fresh mint leaves
  • Zest and juice of 1 lemon
  • 40 grans of Feta cheese (crumbled)

Preparation
Start with washing the zucchini, then use a mandolin or a knife to cut thin slices. Peel and smash the garlic clove. Remove the seeds of the chilli pepper and cut in thin slices as well. Now heat up a pan with a drizzle of olive oil, add the garlic and chilli, until the oil is infused by these flavours (you will smell this after a couple of minutes). Then add the thin zucchini slices and sauté for about 5 minutes. Add a pinch of salt and mix meanwhile. After let the zucchini cool down on some kitchen paper, to release some of the oil.  While the zucchini’s are cooling down a bit, wash and dry the mint leaves. Then chop them finely and leave some nice ones on the side for on top, to serve.

Serving
When the zucchini is cooled down, leave it inside a bowl and mix with the chopped mint leaves, lemon juice/zest, if needed add some an extra pinch of salt. Then leave the salad on a nice plate, crumble some feta cheese on top, finish with the whole mint leaves and an extra drizzle of extra virgin olive oil. This zucchini salad is super easy to make and perfect for the summer days.
