Linguine al Pomodoro

Ingredients
- Olive oil
- 2 garlic cloves
- 1/1,5 canned peeled tomatoes (Mutti/Graziella)
- Salt
- Linguine (350/400 grams)
- Parmesan cheese
- Handful of fresh basil leaves
Preparation:
Bring a pot with water to boil, whenever it starts to boil add some big sea salt.
Meanwhile start smashing your garlic cloves or if you prefer chopped slices/pieces.
Heat a pan with a splash of olive oil, add the garlic cloves and some branches of the basil, to aromatize the oil. Leave simmer for a few minutes.
Then add the tomatoes and smash them with a fork, so they break. Then add a pinch of salt and leave the sauce simmer at least for half an hour. In this way all flavours can combine well and the acidity of the tomatoes will reduce.
When the sauce is almost ready, start cooking the pasta. After 8 minutes taste if they are (very) al dente, add the pasta to the sauce, stir and add some pasta water, keep on stirring slowly for two more minutes, until you have the perfect combination of tomato sauce and pasta.
Serving
Take a nice plate and make a ball of pasta. Then finish with fresh basil leaves, finely grated parmesan cheese and an extra drizzle of olive oil.
