Lentil salad, Feta and Caramalized onions

Baked Feta lentil salad with Caramelized onion

  • 400 grams lentils (canned/drained)
  • 1 red onion
  • Olive oil
  • 3 tablespoons vinegar
  • 1 teaspoon sugar
  • Salt
  • 200 grams feta cheese
  • 2 garlic cloves
  • Juice of ½ a lemon
  • 100 grams arugula
  • Black pepper

Preheat the oven on 180 degrees. Drain the lentils and leave them on the side. Peel the onion and cut thin slices. Then put a pan on high heat, add a drizzle of olive oil, followed by the onions. After a few minutes, when they are browned a bit, add the vinegar, sugar and a pinch of salt. Leave them simmering on lower heat for another 7/8 minutes, until soft and browned. While simmering, take a baking tray and cover it with some baking paper. Then put the feta cheese in the middle with a drizzle of olive oil and a smashed garlic on top. Leave in the oven for about 10/12 minutes, until browned. Baked feta, gives an extra delicious flavour, especially with the garlic.

Now take the onions and leave them on the side. In the same pan add a splash of olive oil and the other smashed garlic. Add the lentils, and sauté them for about 5 minutes, so they get more flavoured. After that leave them on the side. Then take a bowl add the arugula, some olive oil, lemon juice and mix.

Take a nice bowl or plate. Cover with arugula, then lentils on top. Cut the baked feta in half or crumble it if you like. Then put it on top of the lentils, followed by the caramelized onions, some black pepper and some extra olive oil on top.
