Servings: 2 main dish/ 4 side dish
- 500 grams tomatoes (preferably Roma)
- 2 cucumbers
- 1 red onion
- Olive oil
- Juice of half a lemon
- Tablespoon of vinegar
- 2 tbs dried oregano
- 50 grams of good quality feta cheese
- Handful of Kalamata olives
Start by washing the vegetables. Then cut the tomatoes in halves, then quarts and even smaller if you like. Peel the cucumbers, cut in half and the halves again in halves, then little cubes. Put the tomatoes and cucumbers in a big bowl. Peel and slice the red onion, preferably very thin slices. If you have one, use a mandolin.
Then add salt, olive oil, juice of half a lemon, oregano and vinegar to the bowl. Mix everything well. then cut the feta in little cubes or crumble with your hands on top, as you like it. Finish with the kalamata olives et voila!
This recipe is delicious as a lunch or even dinner. Combine them with my homemade flatbread recipe and Tzatziki and you’ll have a perfect match. You can find them underneath appetizers.
