April 5, 2021

I did a variety of bread baking throughout the first six months of 2020, and as tough as final 12 months was, I did be taught to bake with sourdough and perfected each my sourdough bread and my sourdough focaccia. I gained’t element making a sourdough starter as it’s fairly concerned, though it’s simple. There are a lot of articles on-line on making a sourdough starter with step-by-step directions. I’ve had my starter for years, and if I’m not going to make use of it for a couple of months, I freeze it. It then takes a couple of week of frequent feedings to get it again to a bubbly, energetic starter once more.

Throughout my sourdough schooling, one tip I realized was that if I deliberate to bake bread, then I fed my starter each the night earlier than and the morning of, a minimum of three hours earlier than assembling my substances. This double feeding ensures that my starter could be very energetic. This focaccia is one in every of my husband’s favorites, made with chopped Kalamata olives kneaded into the dough. You may make the recipe as is or skip the addition of the olives for those who favor.
