1. PREP Thaw frozen scallops in the fridge (not on the countertop) and drain the juices.  Prep scallops by checking for the “aspect muscle” (a triangular piece) and easily pinch or minimize it off. Pat the scallops dry.

2. SEAR Sear scallops till golden brown (per recipe under) and put aside.

3. SAUCE In the identical pan, cook dinner garlic and white wine. Add cream and lemon juice and simmer till thickened. Whisk in butter.
