Orecchiette con Cime di Rapa, Burrata e Alici
(Broccoli rapes, burrata and anchovies)

Ingredients
- 400 grams of Cime di Rapa (Broccoli rapes) if you can’t find those, you can use Bimi’s, regular broccoli or a mix of both
- Salt
- Olive oil
- 2 garlic cloves
- 1 fresh chilli pepper
- Branch of fresh parsley
- 1 lemon
- 20 grams of parmesan cheese
- 2 anchovies
- Orecchiette 500 grams dry or fresh
For on top
- Burrata
- 6/8 anchovies
Preparation
Bring a pot with water to boil. Then wash the broccoli or broccoli rapes. If you’re using regular broccoli cut the broccoli in little pieces and also use the stem of the broccoli, which is super delicious! Just get rid of the outside part and cut the rest of the stem in slices. Add some sea salt to the water and when boiling cook the broccoli rapes for 5/6 minutes until cooked with still a bite. Bring another pot of water to boil for the pasta.
Meanwhile peel and smash the garlic, put half of one garlic on the side for the broccoli pesto that we make on the side. Then cut the chili pepper in little slices. When the broccoli is ready make sure to drain well, especially the broccoli rapes, squeeze out the liquid as much as you can.
For the broccoli pesto
Meanwhile make the broccoli pesto, so take the part of broccoli that you left on the side (around 60/80 grams) and put it inside a bowl to blend. Add 10 grams of olive oil, zest of 1 lemon, 20 grams of grated or chopped parmesan cheese, half garlic, 10 grams of parsley and 2 anchovies. Then blend the mixture, until you have a smooth pesto.
Back to the other broccoli, heat up a pan with some olive oil, add the smashed garlic and chili pepper and infuse the oil with these flavors. After 2 /3 minutes you’ll see the garlic getting a bid browned (not burned), then add the broccoli and sauté them until browned (6/7 minutes).
Time to cook the pasta, if you’re using fresh Orecchiette cook them for 4 minutes maximum and with the dry ones around 8/9 minutes. When al dente, put them straight into the sautéed broccoli mix, add a spoonful of pasta water and cook them for another 1 /2 minutes. Then add the broccoli pesto and combine everything.
Serving
Time for plating, start with the orcecchiette, then on top a piece of burrata, followed by 1 or 2 anchovies. If you like, finish with even more chopped parsley on top.
